Why do we love figs? So many reasons ! They are surprisingly high in calcium and just a little sexy! These bars are really easy to make and a perfect mid-afternoon pick me up or a post sport snack. You can replace the figs with other dried fruit and use other nuts.
- 250 g dried figs (the soft ones or else soak in water for 30 minutes
- 150 g almonds
- 50 g pistachios (wihout their shells and no added salt)
- 50 g oats
- Zest and juice of 1/2 orange
- 1 tsp of cinnamon.
Blend the almonds and the pistachios until you have large ‘crumbs’. Add the rest of the ingredients and blend again until you have a ‘paste with chunky bits’. Using your hands, shape into 12 balls and place in the fridge. They will keep for a week.
